I buy bananas every time I go to the grocery store. I use many of them in the healthy protein smoothies that I frequently make for my breakfast. Sometimes, I get a little over zealous in my shopping and buy more than I need. When they get a over-ripe, then I make this tasty gluten-free banana bread. It’s very yummy and good enough to practically be a dessert! You are going to be shocked at an unlikely hidden ingredient in this super yummy banana bread!
These are the ingredients. It doesn’t take too many. Do you see an ingredient that is out of the ordinary for bread?
This quick bread is so easy to make! First, you need to melt the ½ cup butter. Add this to the sugar and blend the two together.
Slightly beat the eggs and add in the vanilla.
Now pour the egg/vanilla mixture into the butter mixture. Beat on low until smooth.
Combine the GF flour, baking soda and salt together and add gradually to the mixture. Beat until smooth. (If you don’t need gluten-free, then use regular all-purpose flour).
Your last task is to mash the bananas with a fork and combine with the sour cream. Fold this banana/sour cream combination into the batter. WHAT! Sour Cream. I know – I was so pleasantly surprised when I did this. This addition makes a tasty, super yummy, moist loaf of bread!
Use cooking spray to thinly coat the inside of a 9x5x3 inch loaf pan. Pour the batter into the pan. The batter will be lumpy.
Bake at 350 degrees for one hour. When it is done cooking, let the pan sit on a cooling rack for 10 min.
Then turn the pan upside down and the loaf will slide out. Continue to cool before cutting.

Gluten-Free Banana Bread
½ c. butter, melted
1 c. sugar
2 eggs, slightly beaten
1 t. vanilla
1 ½ c. gluten-free flour (You may use all-purpose flour if you do not need GF)
1 t. baking soda
½ t. salt
2 medium bananas, mashed
½ c. sour cream
Stir together melted butter and sugar. Add eggs and vanilla, mixing well. then add to the sugar mixture. Combine flour, soda and salt into the wet mixture. Finally, fold in the sour cream and bananas. Spread evenly in greased loaf pan. Bake at 350 degrees for 60 min. Cool pan for 10 minutes before removing.
